Legend Has It
According to legend, the first person to ever discover bird's nest was an Admiral from China known as Admiral Cheng Ho. He discovered bird's nest on a deserted Malay island during his mission to develop trade routes in South Asia. This was during the Ming Dynasty, some time around 1368-1644. It is believed that bird's nest soup was popularized when Admiral Cheng Ho introduced it to The Imperial Court of China. Today, bird's nests continues to enjoy the same popularity around the world, as it did centuries ago. It is stated that bird's nest is 1 of the 4 main tonics of China.

Swiftlet are from the "APODIDAE" family, scientific name derived from the Greek work APOUS meaning “without feet”. Swiftlets can easily fly 50 km in a day, have superb memories to locate their own nests among thousands and navigate in total darkness. Pairing is permanent, well known for their fidelity. Both partners participate in nest building and egg hatching. Swiftlets eat flying insects. They compress between 100~1000 insects in the pouch under their tongue and then regurgitate to feed their babies. Babies remain in the nest for 45-60 days before flying away.
It takes 30-45 days to build a nest, averagely 3 brood per year. Edible nests are built by 3 different species, namely Fuciphagus, Maximus, Esculent. Traditionally, nests are harvested from caves. To protect their babies and eggs from natural predators, swiftlets started to abandon their natural cave habitat and migrated to human made bird’s houses. It was found that urbanisation is humane and economical and helps sustain their population, hence fewer and fewer swiftlets remain in caves. The Malaysia Wildlife and National Park Department has concluded that commercial bird's house farming is the best way to bring up the decreasing numbers of swiftlet’s population.

The Aerobic Plate Count (APC) is used as an indicator of bacterial populations on a sample, it indicates the level of microorganisms in a product.
